Serves 8-10
400g porridge oats
200g mixed nuts
200g mixed seeds
90g coconut oil
90g maple syrup 1 tbsp cinnamon
Method:
Heat oven to 180 degrees.
2. Melt coconut oil and maple syrup in a pan- don’t let it boil, just heat until coconut oil has melted.
3. Add oats, nuts, seeds and cinnamon into a large bowl and mix together.
4. Pour oil/syrup mix over dry ingredients and mix until everything is coated.
5. Pour into a large baking tray.
6. Cook in oven for 20-25 minutes, mixing every 5 minutes to prevent burning.
7. Leave to cool completely before storing in an airtight container.
8. Enjoy with Greek yoghurt and mixed berries!
